I must first say HOW GRATEFUL I am for a few moments to myself today. Jackson has been sick (cough and sinus trouble) and very clingy, so it makes it hard to get anything done. Yes, the kids do nap, but the past few days I've used this time to do things that needed to be done that I couldn't (would rather not) do with the kids right there awake- yesterday, it was ironing- glad to be done with it.
Anyway, today, I was blessed with some ME time, some creative inspiration, and time enough to COMPLETE it. Can you say...MIRACLE? I mean really, I have these creative urges, but then I sit down at my scrapbook corner and am "creatively constipated". Nothing comes together as I'd hoped, or it takes me WAY to long to get to that point. My point being, I'm grateful the Lord granted me these few miracles today, all for me, and me alone. :) THANK YOU!
Oh yeah, on to "feed my family".
After lunch today, before naps, I was needing some baked goodness of some sort. This is always a good "go-to" recipe. VERY easy, and SUPER yummy.
Chocolate Chip Cheese Bars
1 package refrigerated chocolate chip cookie dough**
1- 8 oz. pkg Cream Cheese, softened
1 egg
1/2 c. Sugar
Heat oven to 350*. Grease 8x8 pan. Put 1/2-3/4 of the dough in the pan and press it down.
Mix cream cheese, egg, and sugar. Pour in pan on top of dough. Crumble remaining dough on top of cream cheese layer.
Bake at 350* for 35-40 minutes. Refrigerate leftovers, IF THERE ARE ANY?!
**Can use 2 c. of your favorite choc. chip cookie dough recipe instead.
Chicken DaVinci
16 oz. Noodle pasta, cooked according to directions.
Drain and toss in bowl with 2 T. olive oil.
1 lb. Chicken, cubed
3 italian sausage links, cut into 1/2" pieces
1 red onion, chopped
1 green pepper, chopped
10-12 mushrooms, quartered
2 cloves garlic, minced
Saute chicken and sausage in 2 T. olive oil for 5 minutes. Remove from pan, drain drippings.
Add a little more oil and saute veggies. Add garlic when veggies are almost done. Add chicken and sausage back to pan to mingle flavors.
Serve with noodles and season with salt, pepper, and parmesan and/or romano cheese. Enjoy! So fresh and delicious! Great smells with the onions, peppers, garlic. Don't forget the parmesan cheese; It's a great finishing touch! YUM!

Cravings for vegetables?
No I'm not pregnant! 2 weekends ago I was craving vegetables. (I know, how weird is that?) I threw in a pizza and then made my zesty green beans and onions and had a big bowl of them first, before I ate any pizza. Weird.
RECIPE: Zesty Green Beans- thank you Mom!
**Note: Have anyone that doesn't like green beans? This might be your ticket. It worked for Josh- this is the only way he'll eat 'em.
Saute in 1-2 T. oil-
1/2 Onion, halved and sliced
When the onions are close to done, add
1- 14 oz. bag french-cut green beans, frozen.
Put the lid on for a couple minutes, then remove it for the last few minutes to evaporate the water.
Sprinkle SEASON-ALL all over, stir. Enjoy.
I was also wanting use up some other things I had in the fridge so I made some apple crisp, and some Broccoli Salad. I used the Apple Crisp recipe from EveryDay Food Magazine- good one Martha!
Broccoli Salad- a somewhat strange salad, if you just look at the ingredients (broccoli, raisins, bacon, green onions, mayo/vinegar/sugar dressing), but mix it all up and give it a try. You might be surprised. This is a family tradition, thank you to Aunt Melanie. We have it with every Christmas Eve family get together meal.
Oh, and a couple days before all of this I was trying to use up the rice krispies I had, so I made Rice Krispie Treats, but I added a couple drops of red food coloring to them, so they turned out PINK! I felt like Martha for a minute there. :)
And, my last entry of cooking was when I finished off that box of rice krispies by making Scotcharoos (minus the scotch, add peanut butter chips instead). Thank you Shelly- this has been well-used.
I was going to post ALL the recipes, but time constraints encourage me otherwise. If anyone wants any of those recipes, drop me a line and I'll post it/them.
