pizza sauce

I've been in a kick using one of my Our Best Bites cookbooks lately, so I naturally, had to try their recipe for Pizza Sauce. It uses some of the garlic bread seasoning I had mixed up, and it tastes really good! I may switch from my old recipe to this one!

Pizza Sauce
Recipe by Our Best Bites


Ingredients:
1 6-oz. can tomato paste
6 oz. water (just use the empty tomato paste can)
3 Tbsp. garlic bread seasoning
1 Tbsp. sugar or honey
3/4 tsp. onion powder
1/4 tsp. red pepper flakes (optional)

Instructions:
Empty tomato paste into a bowl and add water a few tablespoons at a time, stirring constantly until combined. Add remaining ingredients, stir to combine, and allow to stand until ready to use. Covers two average-sized pizza; freezes extremely well for up to 3 months.

fresh tomato salsa

Someday I'll have a garden, and I think I'll plant some tomatoes, which doesn't seem like anything out of the ordinary for most people. But, none of the folks in my house like raw tomatoes; I know, we're weird. BUT we LOVE them in salsa! (Or more correctly Pico de Gallo. However I like my tomatoes very finely diced so it might be considered SALSA, but without the "cooking it" part. Read here for the difference between pico de gallo and salsa.)

Thankfully, my in-laws have a NICE garden with an ABUNDANCE of tomatoes and I think they were more than happy to get rid of a bunch of the tomatoes they had, knowing they'd have just that many more in 2-3 days. :) So, this is the recipe I've found for fresh tomato salsa/pico de gallo (aka pdg) that we really like. I better write it down so I'll have it for NEXT time I want to make salsa/pdg.

Now this looks good! Although, I want all my veggies a lot more finely diced so...
I run it through my BELOVED (which I use all the time!) food processor  in batches. I don't want MUSH so I pulse some tomatoes until they're the desired size, then swap out for more tomatoes, then swap out for the onion, etc. This way it's mostly evenly sized. I wouldn't want to be the person who got a BIG hunk of onion!
 

Ingredients:
  •  4-5 large chopped tomatoes (or 6-8 smaller ones) I even seeded mine this time, but I don't think it really makes a difference
  • 1 green bell pepper, chopped
  • 1 c. onion, diced
  • 1/4 c. minced fresh cilantro (or if you don't have fresh you can use about 2 Tbsp dried- as in coriander? haven't tried the dried cilantro- not sure how it works...?)
  • 2 T fresh lime juice (may need an extra splash of lime juice at the end)
  • 4 teaspoons chopped fresh jalapeno pepper (include seeds if you want it hotter- add less if you don't like heat) my household does NOT do well with heat, but give it a try if you like it
  • 1/2 t ground cumin
  • 1/2 t kosher salt
  • 1/2 t ground black pepper
  • 2 garlic cloves, minced (or 1/2 t. garlic powder)
Mix all ingredients together and serve. Keep leftovers in fridge. This tastes amazing after about 24 hours in the fridge . . . the flavors all mix together and it is delicious!

bloomin' zucchini fries and sweet onion dip

Man I LOVE Pinterest!  Here's another good find from there. These are SO yummy- healthy and the dip is AMAZING! We had a bunch left over so we grilled some chicken and slathered it on. Mmmmm!

Ingredients:
3 medium zucchini, 9-10" long
Salt
1 T. Butter
1 medium sweet onion
2 T. cider vinegar
2 T. honey
1 T. prepared mustard
1 c. mayo
1 cup Panko bread crumbs
scant 1/2 cup freshly grated Parmesan cheese
1 tablespoon Pizza Seasoning or mixed Italian herbs
2 large eggs or 1/2 c. egg substitute

Directions:
1. Cut each zucchini into 3″ sticks about the diameter of your finger. Cutting each zuke into 9 sticks lengthwise, then cutting into 3″ lengths, works well.

2. Place the zucchini sticks in a colander over a bowl, and sprinkle with 1 tablespoon of salt. Let them drain for 1 hour or longer. While the zucchini are shedding their excess liquid, make the dip.

3. First, melt 1 tablespoon butter in a medium-sized frying pan over moderate heat, and add 1 medium sweet onion (about 1/2 pound), sliced. Cook, stirring occasionally, until the onion softens, then caramelizes. This should take between 20 and 25 minutes, at medium-low heat. The lower the heat, the longer it takes, but the less likely you are to burn the onions.When the onions are medium brown, remove them from the heat.

4. Place the caramelized onions, cider vinegar, honey, and mustard in a food processor or blender. Process until fairly smooth.

5. Remove from the processor, and stir in 1 cup mayonnaise. (The resulting 1 1/2 cups dip can be used not only for these zucchini sticks, but as a tasty sandwich condiment.)

Note that I’ve purposely not added any salt to the dip. I find that the zucchini sticks themselves, with the salt you added to drain them and the addition of Pizza Seasoning, are plenty salty. If you plan on using this dip for another purpose, you might want to add 1/4 teaspoon salt.

6. Back to the zucchini sticks. Rinse them thoroughly; you want to get rid of any excess salt. Then pat them dry.

7. Next up: the bread and cheese coating. But first, preheat the oven to 425°F. Line a baking sheet with parchment, and spray the parchment with olive oil.

Combine the following:
1 cup Panko bread crumbs
scant 1/2 cup freshly grated Parmesan cheese
1 tablespoon Pizza Seasoning or mixed Italian herbs
Mix until thoroughly combined.

8. Beat 2 large eggs; or pour 1/2 cup egg substitute into a dish. You’re going to dip each zucchini stick in the egg then roll it in the crumbs.

Warning! Warning! Do as I say, not as I did. I figured, heck, just lay ‘em all in the crumbs and toss ‘em around, right? Never mind this coating one-by-one stuff…
WRONG.

About midway through, the crumbs had gotten so much egg splashed onto them they were sticking together in a solid mass. So I had to add a lot more Panko, and that still didn’t really help.
Trust me, these will look a lot nicer if you take the time to dip-and-roll one by one. Maybe you could divvy up the egg and crumbs, and get one of the kids to help you…

9. Place the sticks on the prepared baking sheet. Bake the sticks for about 12 minutes, until they’re starting to brown. Remove from the oven, and turn them over; you may actually need to do this one by one, or you may be able to turn several at a time using a spatula. Bake for an additional 12 to 16 minutes or so, until golden brown and crisp.

These baking times don’t match those in the recipe; I realize that. Bottom line, bake until the sticks are a speckled golden brown…

Now, put the sticks on a plate, the dip in a nice bowl…and dig in! With guests, of course.
Any leftover sticks can be wrapped and stored in the fridge. Reheat at 350°F for about 10 to 15 minutes, if desired.

{updated} marshmallow fruit dip

I got this heavenly dip recipe from my Aunt D. It is delicious with fruit- apples, grapes, pineapple, kiwi, etc.!

8 oz. cream cheese, softened
7.5 oz jar of marshmallow creme
1/2 t. lemon extract or 1 t. lemon zest (I prefer the extract, so I don't have the bits of zest in my creamy heaven)
3/4 c. powdered sugar

Blend all ingredients together and keep chilled until you're ready to DEVOUR it. Serve with apples, grapes, kiwi, pineapple, blueberries, etc.

Cook's note: Too sweet for you? Leave out or reduce the powdered sugar so it's just how you like it.

cheesy spinach & bacon dip

This is one of my FAVORITE dip recipes! I love it with tortilla chips!


Prep: 10 minutes

Total: 15 minutes

1 pkg (10-16 oz.) frozen chopped spinach, thawed & drained (bag size depends on how much spinach you want in your dip; I prefer the 16 oz.; if you like it cheesier, use 10 oz.)
1 lb. Velveeta cheese product, cut into 1/2" cubes
4 oz. cream cheese, cubed
1- 10 oz. can Rotel diced tomatoes & green chilies, undrained
8 slices bacon, crisply cooked & crumbled

1. Combine all ingredients in microwavable bowl.

2. Microwave on HIGH 5 minutes, or until cheeses are completely melted and mixture is well blended, stirring after 3 minutes. Serve with tortilla chips and cut-up veggies.


Yield: 4 cups

savory herb dip

*yummy dip for veggies*

1- 8 oz. pkg cream cheese, softened
1/2 c. mayo- optional
1- 0.7 oz. pkg. dry Italian salad dressing mix
1/4 c. milk

Mix all ingredients. Chill until ready to use. Serve with carrots, broccoli, cucumber, etc.

Yield: 1 1/2 c. dip
