Ingredients
1 envelope dry onion soup mix
1/4 c. vegetable oil
1/4 c. fresh squeezed lime juice (or juice from 1 lime, approx.)
1 t. grated lime zest
1/4 c. water
2 cloves garlic, crushed (or 1/2 t. garlic powder)
1 t. cumin
1/2 t. oregano
1/4 t. black pepper
1 lb. flank steak
1 onion, sliced
1 green pepper, sliced
mushrooms, sliced
Directions
- Combine 1st 9 ingredients in a small bowl. Reserving 1/4 c., pour rest of marinade into 1 gallon plastic bag. Add steak, press out air and seal. marinate in refrigerator for 4 hours or overnight.
- Pre-heat broiler or grill on high. Remove steak, discarding marinade, and pat dry with paper towel.
- Saute onion, pepper and mushrooms in 1-2 T. vegetable oil until tender. Set aside.
- Cook 5 minutes. Turn steak, basting with reserved mariade, and cook until center reaches 145*, about 10 minutes.
- Let rest 5 minutes, then slice thinly on the diagonal. Serve in warmed tortillas, topping with sauteed onions, peppers, and mushrooms.
Substitute beef stir-fry for flank steak and cook in preheated grill pan or wok over medium-high heat with 1 T. oil and slived onions and mini sweet peppers.
